Baked Chicken Strips

  • 180 ml dried breadcrumbs
  • 45 ml Parmesan cheese, finely grated
  • 15 ml dried oregano
  • 7 ml garlic flakes
  • 5 ml onion powder
  • 15 ml chicken stock powder
  • 2 ml salt
  • 2 ml freshly ground black pepper
  • 2 medium eggs
  • 3 chicken fillets
  • 5 ml butter, melted

Serve with

  • 200 g mixed leaves
  • 4 radishes, sliced


  1. Preheat the oven to 180°C and lightly grease a baking tray with cooking spray. Mix the breadcrumbs with the cheese, oregano, garlic flakes, onion and chicken stock powders, salt and pepper, and transfer to a flat plate.
  2. Whisk the eggs and place them next to the breadcrumb mix. Cut the chicken fillets into strips. Coat each strip in crumbs, dip them in egg and coat them in crumbs again. Continue until all the strips are coated. Place the strips individually on the prepared tray and dab with melted butter using a brush.
  3. Bake the strips for 5 minutes, then turn and bake them for 2 more minutes to crispen the other sides. They can be served warm or cold on a bed of mixed leaves and radishes, or just as they are, along with a dipping sauce.
