Berry Popsicle

Berry popsicle


Serves:                                   8

Preparation time:                 15 minutes

Freezing time:                        4 hours



For popsicles:

  • 400 g frozen mixed berries
  • 1 cup orange juice
  • 1 t fresh ginger, grated
  • 4 T caster sugar

For the cocktail:

  • 4 oranges, rinsed and sliced
  • 1 cucumber, cut into ribbons
  • 125 g strawberries, halved
  • 3 cups lemonade
  • 1 cup ginger ale
  • 8 sprigs mint


  1. Blend the berries, juice, ginger and sugar until smooth.
  2. Pour into popsicle moulds, insert popsicle sticks and freeze for 4 hours or overnight until solid.
  3. Place the oranges, cucumber and strawberries into a jug, then pour over the lemonade and ginger ale.
  4. Pour the cocktail into glasses filled with ice, then place a popsicle into each glass, add a sprig of mint.
  5. Serve immediately.
