Blueberry Muffins

Yields: 6 large muffins


  • 2 cups flour
  • 2 teaspoons Baking powder
  • 2/3 cups Castor Sugar
  • 2/3 cups white chocolate
  • 1 whole egg
  • ¾ cup Amasi ( add extra if you need)
  • 140ml melted butter
  • 1and ½ teaspoon of vanilla Extract
  • 1and ½ cup Blueberries or any fresh berries you would prefer
  • Icing sugar


  • Pre – Heat your ELBA oven to 180 degrees
  • Sift the flour, castor sugar together then add white chocolate
  • Make a well in the Centre of this , add the egg, amasi, butter and vanilla essence and combine together be careful not to over mix
  • Grease a muffin tin and divide mixture between six muffin tins
  • Divide the blueberries of fresh berries and squish into each muffin using your fingers
  • Sprinkle with icing sugar and bake at 180 degrees for 25 minutes until cooked
